What is the +1 of the 4+1 channels?

Nowhere in the user manual can I find anything on this "4+1" thing. In addition, when I went to record a mix, it made me sacrifice one of my 4 channels before I could do so! I own the Rane 62, 68, and 57, and all 3 of these have been able to record without me having to give up a channel. I'm not thrilled about this, so I'm hoping I can use the "+1" as my record channel?

the "+1" is for the MIC/AUX channel, which is in addition of the 4 music channels.
For recording your session, you can use the "REC" output or an internal ASIO via USB. Setup menu allow you to choose the way, and the audio path you want to record.
For most of DJ, selecting the channel to record is maybe useless, so you select master in rec option, and the REC out will send the result of your mix like as on master out.

When you use Serato, you simply hit 'record' on the screen, and it records your mix. At least, that's how it works with Rane 62,68,64, etc. When I tried with the RMX90, it made me choose a channel which I would lose control of because it needed it to record. If there's a way around this, I need a step-by-step guide.

have you checked the REC output channel into setup menu ?
you must choose REC or at least master, but be careful, if you choose master, the master level potentiometer will acts on record too.
